  • 4 pieces lobster tails
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Optional: lemon wedges, for garnish

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. Using kitchen scissors, carefully cut the top shell of each lobster tail down the center, exposing the tender meat.
Make the Herb Butter
  1. In a bowl, whisk together melted butter, parsley, chives, minced garlic, lemon juice, and a pinch of salt and pepper.
Grill the Lobster
  1. Place the lobster tails on the grill, meat-side up, and brush generously with the herb butter.
  2. Close the lid and grill for about 6-8 minutes or until the meat is opaque and has nice grill marks.
Finish with Flair
  1. Once cooked, brush the lobster tails again with the herb butter before serving.
  2. Garnish with lemon wedges if desired.

Notes

Add a sprinkle of paprika or Old Bay seasoning to the herb butter for extra flavor. Be careful not to overcook the lobster to prevent it from becoming rubbery. For multiple servings, grill in batches to gather everyone around.
