Ingredients
  

For the Flank Steak
  • 1.5 pounds flank steak Choose a good quality cut for the best flavor.
  • 2 tablespoons olive oil For marinating the steak.
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano Adds a nice herby flavor.
  • Salt and pepper to taste To season the steak.
For the Caprese Salad
  • 2 large tomatoes, sliced Use ripe tomatoes for the best flavor.
  • 8 ounces fresh mozzarella, sliced
  • Fresh basil leaves For layering.
  • Salt and pepper to taste To season the salad.
For the Balsamic Dressing
  • 0.5 cup balsamic vinegar
  • 0.25 cup olive oil
  • 1 tablespoon Dijon mustard Adds tanginess to the dressing.
  • 1 tablespoon honey Balance the acidity with sweetness.
  • Salt and pepper to taste For dressing seasoning.

Method
 

Marinating the Steak
  1. In a bowl, whisk together olive oil, minced garlic, dried oregano, salt, and pepper.
  2. Rub this marinade all over the flank steak.
  3. Allow the steak to marinate for at least 30 minutes or up to overnight.
Preparing the Balsamic Dressing
  1. Combine the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper in a jar.
  2. Shake until fully blended, then taste and adjust seasoning.
Grilling the Flank Steak
  1. Preheat your grill to medium-high heat.
  2. Once hot, place the flank steak on the grill.
  3. Cook for about 5-6 minutes on each side for medium-rare or longer if desired.
  4. Let the steak rest for about 10 minutes before slicing.
Assembling the Caprese Salad
  1. On a platter, alternate slices of tomato and mozzarella, tucking fresh basil leaves between.
  2. Drizzle some balsamic dressing over the top and season with salt and pepper.
Slicing and Serving
  1. Slice the flank steak thinly against the grain.
  2. Arrange the slices atop the Caprese salad.
  3. Drizzle additional balsamic dressing over everything.

Notes

Don’t worry if your balsamic dressing looks a little lumpy—it will blend after shaking. Use fresh, ripe tomatoes for the best flavor in the salad.
