Marinating the Steak
- In a bowl, whisk together olive oil, minced garlic, dried oregano, salt, and pepper.
- Rub this marinade all over the flank steak.
- Allow the steak to marinate for at least 30 minutes or up to overnight.
Preparing the Balsamic Dressing
- Combine the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper in a jar.
- Shake until fully blended, then taste and adjust seasoning.
Grilling the Flank Steak
- Preheat your grill to medium-high heat.
- Once hot, place the flank steak on the grill.
- Cook for about 5-6 minutes on each side for medium-rare or longer if desired.
- Let the steak rest for about 10 minutes before slicing.
Assembling the Caprese Salad
- On a platter, alternate slices of tomato and mozzarella, tucking fresh basil leaves between.
- Drizzle some balsamic dressing over the top and season with salt and pepper.
Slicing and Serving
- Slice the flank steak thinly against the grain.
- Arrange the slices atop the Caprese salad.
- Drizzle additional balsamic dressing over everything.
Notes
Don’t worry if your balsamic dressing looks a little lumpy—it will blend after shaking. Use fresh, ripe tomatoes for the best flavor in the salad.
