Ingredients

For the Grilled Fish

  • 1 tablespoon olive oil For marinating the fish.
  • 1 unit Juice of 1 lemon Freshly squeezed is best.
  • 1 teaspoon garlic powder Add flavor to the marinade.
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or dill) For topping.
For the Crispy Fries
  • 2 large potatoes (russets work great) Cut into even-sized strips.
  • 2 tablespoons olive oil For coating the fries.
  • 1 teaspoon paprika For seasoning.
  • Salt and pepper to taste

Method

Preparation
  1. Preheat the Grill: If you’re using a gas grill, preheat it to medium-high heat, or use a stovetop grill pan or bake the fish.
  2. Prepare the Fish: In a bowl, mix together the olive oil, lemon juice, garlic powder, salt, and pepper. Coat the fish fillets in the marinade and let sit.
  3. Make the Crispy Fries: Preheat your oven to 425°F (220°C). Cut the potatoes into strips and toss with olive oil, paprika, salt, and pepper.
Cooking
  1. Bake the Fries: Spread the fries on a baking sheet and bake for 25-30 minutes or until golden and crispy, flipping halfway through.
  2. Grill the Fish: Place the marinated fish on the grill when the fries are halfway done, cooking for 3-5 minutes on each side.
Serving
  1. Serve with Style: Plate the fries and grilled fish together, garnishing with fresh herbs.

Notes

For extra crispiness, soak the cut potatoes in cold water for about 30 minutes before baking. Adjust cooking times based on the thickness of the fish. Various fish can be substituted as desired.
