Prepare the Chicken Marinade
- In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag or a baking dish and pour the marinade over them. Seal it up tight and let it marinate for at least 30 minutes.
Make the Tzatziki Sauce
- Combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt in a bowl.
- Mix until everything is well-combined. Taste and adjust seasoning if necessary.
- Optional: Add chopped dill or mint for extra flavor.
Grill that Chicken
- Preheat your grill or grill pan to medium-high heat.
- Remove the chicken from the marinade and discard the excess. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before slicing.
Plating Perfection
- Slice the chicken and serve it on a platter. Drizzle the tzatziki on top or serve it on the side for dipping.
- Garnish with fresh herbs if desired.
Notes
For a quick option, use store-bought tzatziki. Extra cucumber can be tossed in a salad to reduce waste.
