Ingredients
  

For the Crostini
  • 1 piece baguette, sliced into 1/2-inch thick pieces
  • 3 tablespoons olive oil
  • to taste Salt and pepper
For the Beef
  • 1 pound beef tenderloin, trimmed
  • 2 tablespoons Dijon mustard
  • to taste Salt and pepper
  • to taste Fresh herbs (like thyme and rosemary), chopped
For the Béarnaise Sauce
  • 1/2 cup white wine
  • 1/4 cup white wine vinegar
  • 1 piece shallot, minced
  • 3 pieces egg yolks
  • 1 cup unsalted butter, melted
  • to taste Fresh tarragon, chopped
  • to taste Salt and pepper

Method
 

Preparation of Crostini
  1. Preheat your oven to 400°F (about 200°C). Arrange baguette slices on a baking sheet and brush one side with olive oil. Sprinkle with salt and pepper.
  2. Bake for about 5-7 minutes or until golden and crispy.
Preparation of Beef
  1. Season the beef tenderloin with salt, pepper, and Dijon mustard. Rub fresh herbs into the meat.
Grilling the Beef
  1. Preheat your grill to medium-high heat. Grill the beef for about 4-5 minutes per side or to your desired level of doneness.
  2. Let the beef rest for about 5-10 minutes before slicing thinly.
Making Béarnaise Sauce
  1. In a small saucepan, combine white wine, white wine vinegar, and minced shallot. Simmer until reduced by half, then strain into a bowl.
  2. Whisk in egg yolks and place over simmering water. Whisk until thickened, then slowly drizzle in melted butter.
  3. Finish with fresh tarragon, salt, and pepper. Optional: add a splash of lemon juice.
Assembly
  1. Spread Béarnaise sauce on crostini, layer with beef slices, and drizzle more sauce if desired.

Notes

Prepare the Béarnaise sauce ahead and keep it warm; stir to re-combine if needed. You can also grill the beef ahead of time to reduce stress before serving.
