Ingredients
  

For the Steak
  • 1 lb steak (sirloin or ribeye) Choose your preferred cut for best flavor.
  • 1 tsp salt For seasoning.
  • 1 tsp pepper For seasoning.
  • 1/3 cup balsamic vinegar For marinating the steak.
  • 1/4 cup olive oil For marinating the steak.
  • 1 tsp honey For sweetness in marinade.
  • 1 tsp Dijon mustard For emulsifying the marinade.
For the Salad
  • 3 cups mixed greens Spinach, arugula, or preferred blend.
  • 1 cup cherry tomatoes Halved for a pop of color.
  • 1/2 cup red onion Thinly sliced for flavor.
  • 1 each avocado Diced for creaminess.
  • 1/4 cup crumbled feta cheese Optional, but highly recommended.

Method
 

Marinating the Steak
  1. Begin by marinating your steak in a mixture of balsamic vinegar, olive oil, honey, and Dijon mustard for at least 30 minutes; an hour is even better.
Grilling the Steak
  1. Preheat your grill to about 450°F (or medium-high heat if using a grill pan).
  2. Season the marinated steak generously with salt and pepper.
  3. Grill the steak for about 4-5 minutes on each side for medium-rare, or longer if you prefer it well-done.
  4. Let the steak rest for a few minutes before slicing.
Assembling the Salad
  1. In a large bowl, combine the mixed greens, cherry tomatoes, red onion, and avocado.
  2. Toss gently with your favorite salad dressing or the remaining balsamic marinade.
  3. Slice the rested steak thinly against the grain and layer it beautifully atop the salad.
  4. Crumble feta cheese on top before serving.

Notes

For a smoky flavor, use a grill or add walnuts or almonds for crunch. Store leftover components separately to prevent wilting.
