Preparation
- Preheat your oven to 475°F (245°C).
- Roll out your pizza crust on a floured surface, or place your store-bought crust on the baking sheet.
- In a skillet, heat the olive oil over medium heat and sauté the roasted garlic and fresh spinach until wilted, about 2-3 minutes.
- Add a sprinkle of salt and pepper, then remove from heat.
- In a bowl, mix together ricotta cheese, dried oregano, and a dash of salt.
Assembly and Cooking
- Spread the ricotta mixture over the pizza crust, leaving a little space around the edges.
- Layer the sautéed spinach and garlic mixture over the ricotta, then top with mozzarella cheese.
- If desired, add crumbled feta and Kalamata olives on top.
- Bake in the oven for about 10-12 minutes until the cheese is bubbling and the crust is golden.
- Let the pizza cool for a minute, slice, and serve.
Notes
Feel free to customize with your favorite veggies like bell peppers or sun-dried tomatoes. Leftover pizza can be tossed into a salad for lunch.
