Pizza Base
  • 1 piece pizza crust store-bought or homemade
Garlic Spinach Mixture
  • 1 tablespoon olive oil for sautéing
  • 4 cloves roasted garlic for flavor
  • 2 cups fresh spinach kale can be added for extra nutrition
  • ½ teaspoon dried oregano for Mediterranean flavor
  • Salt and pepper to taste
Cheesy Toppings
  • ½ cup ricotta cheese for creaminess
  • 1 cup mozzarella cheese for gooey texture
  • Optional: Feta cheese and Kalamata olives for additional toppings

Method
 

Preparation
  1. Preheat your oven to 475°F (245°C).
  2. Roll out your pizza crust on a floured surface, or place your store-bought crust on the baking sheet.
  3. In a skillet, heat the olive oil over medium heat and sauté the roasted garlic and fresh spinach until wilted, about 2-3 minutes.
  4. Add a sprinkle of salt and pepper, then remove from heat.
  5. In a bowl, mix together ricotta cheese, dried oregano, and a dash of salt.
Assembly and Cooking
  1. Spread the ricotta mixture over the pizza crust, leaving a little space around the edges.
  2. Layer the sautéed spinach and garlic mixture over the ricotta, then top with mozzarella cheese.
  3. If desired, add crumbled feta and Kalamata olives on top.
  4. Bake in the oven for about 10-12 minutes until the cheese is bubbling and the crust is golden.
  5. Let the pizza cool for a minute, slice, and serve.

Notes

Feel free to customize with your favorite veggies like bell peppers or sun-dried tomatoes. Leftover pizza can be tossed into a salad for lunch.
