Preparation
- Preheat the oven to 475°F (245°C).
- In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped garlic and sauté for about 1-2 minutes until fragrant.
- Add the fresh spinach to the pan and cook until it wilts down, around another 2-3 minutes. Season with salt and pepper.
- Roll out your pizza dough on a floured surface.
Assembly and Baking
- Drizzle the remaining olive oil over the crust and spread the ricotta cheese evenly.
- Top the pizza with the sautéed garlic and spinach mixture, followed by the mozzarella cheese and a sprinkle of feta.
- Bake in the oven for about 12-15 minutes or until the crust is golden brown and the cheese is bubbly.
- Allow to cool for a couple of minutes, slice, and serve.
Notes
Feel free to add sliced olives or artichokes for a Mediterranean twist. Let kids sprinkle cheese as toppings to involve them in cooking. Store leftovers in an airtight container for up to three days.
