Ingredients
  

Pizza Base
  • 1 piece pizza dough Store-bought works wonders.
Toppings
  • 3 tablespoons olive oil Divided between sautéing and drizzling on the crust.
  • 6 cloves garlic, chopped For a flavorful base.
  • 4 cups fresh spinach Responsibly sourced for health.
  • 1 cup ricotta cheese Spread evenly on the pizza.
  • 1 cup mozzarella cheese, shredded For melting and topping.
  • 1/2 cup feta cheese, crumbled Sprinkled on top for extra flavor.
  • Salt and pepper to taste Essential for seasoning.
  • Crushed red pepper flakes Optional, for a spicy kick.

Method
 

Preparation
  1. Preheat the oven to 475°F (245°C).
  2. In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped garlic and sauté for about 1-2 minutes until fragrant.
  3. Add the fresh spinach to the pan and cook until it wilts down, around another 2-3 minutes. Season with salt and pepper.
  4. Roll out your pizza dough on a floured surface.
Assembly and Baking
  1. Drizzle the remaining olive oil over the crust and spread the ricotta cheese evenly.
  2. Top the pizza with the sautéed garlic and spinach mixture, followed by the mozzarella cheese and a sprinkle of feta.
  3. Bake in the oven for about 12-15 minutes or until the crust is golden brown and the cheese is bubbly.
  4. Allow to cool for a couple of minutes, slice, and serve.

Notes

Feel free to add sliced olives or artichokes for a Mediterranean twist. Let kids sprinkle cheese as toppings to involve them in cooking. Store leftovers in an airtight container for up to three days.
