Marinate the Chicken
- In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, lemon juice, salt, and pepper. Add the chicken breasts and make sure they’re well-coated. Cover and chill in the fridge for at least 30 minutes.
Prepare the Tzatziki
- Mix Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, and salt in a bowl. Add fresh dill if desired.
Cook the Chicken
- Preheat oven to 375°F (190°C). Place marinated chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
Serve It Up
- Let the chicken rest for a few minutes before slicing. Serve with tzatziki and your favorite side dishes.
Notes
For best results, marinate the chicken longer. If tzatziki is runny, strain it through a cheesecloth. Feel free to customize the marinade with your favorite spices.
