Ingredients
  

For the Greek Chicken
  • 4 pieces chicken breasts (boneless and skinless)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon oregano (dried)
  • 1 teaspoon thyme (dried)
  • 1 whole lemon, juiced
  • to taste Salt and pepper
For the Tzatziki
  • 1 cup Greek yogurt
  • 1 whole cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • to taste Salt
  • optional Fresh dill, chopped

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, lemon juice, salt, and pepper. Add the chicken breasts and make sure they’re well-coated. Cover and chill in the fridge for at least 30 minutes.
Prepare the Tzatziki
  1. Mix Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, and salt in a bowl. Add fresh dill if desired.
Cook the Chicken
  1. Preheat oven to 375°F (190°C). Place marinated chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
Serve It Up
  1. Let the chicken rest for a few minutes before slicing. Serve with tzatziki and your favorite side dishes.

Notes

For best results, marinate the chicken longer. If tzatziki is runny, strain it through a cheesecloth. Feel free to customize the marinade with your favorite spices.
