Ingredients
  

For the Meatballs
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • for cooking Olive oil
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 small cucumber, grated
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill (or 1 teaspoon dried)
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

Method
 

Making the Meatballs
  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, oregano, salt, and pepper.
  2. Use your hands to form the mixture into 1-1.5 inch balls.
  3. Heat olive oil in a skillet over medium heat. Add the meatballs and cook them until golden brown on all sides and cooked through, about 10-12 minutes.
Preparing the Tzatziki
  1. In a separate bowl, mix the Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper.
  2. Let the tzatziki sit in the fridge while the meatballs are cooking.
Serving
  1. Once the meatballs are cooked, serve them with a generous spoonful of tzatziki on the side.
  2. For a fun meal, prepare small pita breads or slaw for a mini wrap experience.

Notes

These meatballs freeze well, making them perfect for meal prep. You can substitute ground turkey or beef, and feel free to add sun-dried tomatoes or feta cheese for extra flavor.
