Gooey Campfire S’mores Cinnamon Rolls

Ingredients
  

For the Dough
  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • ¼ cup granulated sugar
  • ½ tsp salt
  • 1 cup milk (warm) Heat the milk until warm, but not boiling.
  • 2 tbsp unsalted butter (melted)
  • 1 large egg Room temperature is preferable.
For the Filling
  • ¼ cup unsweetened cocoa powder
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • 1 cup mini marshmallows
  • ½ cup chocolate chips
For the Topping
  • 1 cup powdered sugar
  • 2–3 tbsp milk Adjust for desired glaze consistency.
  • Extra mini marshmallows for toasting Bring your kitchen torch or use the broiler.

Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, instant yeast, sugar, and salt.
  2. In another bowl, mix the warm milk, melted butter, and egg until well combined.
  3. Slowly add the wet ingredients to the dry ingredients and mix until you form a dough.
  4. Knead it on a lightly floured surface for about 5 minutes until it's smooth and elastic.
Let the Dough Rise
  1. Place the dough in a lightly greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
Assemble the Rolls
  1. After the dough has risen, punch it down and roll it out on a floured surface into a rectangle (about 12x18 inches).
  2. Brush the surface with melted butter, then sprinkle the cocoa powder, brown sugar, cinnamon, mini marshmallows, and chocolate chips evenly on top.
  3. Starting from the long side, roll the dough tightly into a log.
  4. Cut it into 12 equal pieces and place them in a greased baking pan.
  5. Let them rise again for about 30 minutes. In the meantime, preheat your oven to 350°F (175°C).
Baking
  1. Once your rolls have puffed up, pop them in the oven and bake for 25-30 minutes.
  2. The aroma will be so good that even the neighbors will want to join you for breakfast!
Finishing Touches
  1. While the rolls are baking, whisk together the powdered sugar and milk to create a simple glaze.
  2. Once the rolls are golden brown, take them out of the oven and drizzle the glaze on top.
  3. For extra fun, toss a few mini marshmallows on top and give them a gentle toast—watch closely to avoid burning.

Notes

Make the dough ahead of time and refrigerate overnight. Store leftovers in an airtight container for up to three days.
