Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the golden potatoes thinly to about 1/8-inch thickness.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, fresh thyme, salt, and pepper.
  4. In a round baking dish, layer the potatoes, drizzling some balsamic mixture over each layer.
Cooking
  1. Cover the dish with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 20 to 25 minutes, or until potatoes are fork-tender and the top is golden brown and crispy.
Serving

Notes

Using a mandoline can make slicing easier for perfectly thin potatoes. Experiment with potato varieties like Yukon Gold or fingerlings. Let the torte cool slightly before slicing for easier serving.
