Preparation
- Preheat your oven to 400°F (200°C).
- Peel and slice the golden potatoes thinly to about 1/8-inch thickness.
- In a small bowl, whisk together balsamic vinegar, olive oil, fresh thyme, salt, and pepper.
- In a round baking dish, layer the potatoes, drizzling some balsamic mixture over each layer.
Cooking
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 20 to 25 minutes, or until potatoes are fork-tender and the top is golden brown and crispy.
Serving
- Allow the torte to cool for a few minutes, then slice and serve warm, optionally garnished with grated cheese.
Notes
Using a mandoline can make slicing easier for perfectly thin potatoes. Experiment with potato varieties like Yukon Gold or fingerlings. Let the torte cool slightly before slicing for easier serving.
