  • 4 pieces boneless, skinless chicken breasts
  • 1 cup buttermilk Can substitute with milk mixed with vinegar or lemon juice.
  • 2 cups crushed cornflakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or olive oil for the baking sheet

Method
 

Preparation
  1. In a medium bowl, take your chicken breasts and pour in the buttermilk. Marinate for at least 30 minutes.
  2. Preheat your oven to 400°F.
  3. In a large bowl, mix crushed cornflakes, garlic powder, onion powder, salt, and pepper.
  4. Remove marinated chicken from the buttermilk and shake off excess. Dip each piece into the cornflake mixture, pressing lightly.
Baking
  1. Place coated chicken breasts on a lined baking sheet and bake for 20-25 minutes until golden brown and cooked through.

Notes

For extra flavor, add cayenne pepper or your favorite herbs. For a crunchier texture, consider double-dipping the chicken in buttermilk before coating with cornflakes.
