Ingredients
  

For the fillings
  • 2 cups cooked chicken, shredded or leftover rotisserie chicken
  • 1 cup shredded cheese cheddar works wonders
  • 1 teaspoon taco seasoning or more if you dare
For the wrapping
  • 10 small tortillas wheat or corn
  • ¼ inch cooking oil for frying
Optional toppings
  • salsa
  • sour cream
  • guacamole

Method
 

Preparation
  1. In a bowl, combine your shredded chicken, cheese, and taco seasoning. Mix well.
  2. Heat your tortillas in a pan for about 30 seconds on each side until they’re pliable.
Assembly
  1. Place about 2 tablespoons of the chicken mixture on the bottom third of each tortilla.
  2. Roll the tortilla tightly, tucking in the edges as you go.
Frying
  1. Heat about ¼ inch of oil in a skillet over medium-high heat.
  2. Carefully place 3-4 taquitos seam-side down in the pan. Fry for about 2-3 minutes on each side until golden brown and crispy.
  3. Remove and let them rest on paper towels to soak up any excess oil.
Serving
  1. Plate your taquitos with a side of salsa, sour cream, or guacamole.

Notes

For perfectly crispy taquitos, ensure the oil is hot and don’t rush the frying process. You can also bake them at 425°F for about 15 minutes if you'd like a healthier option.
