Ingredients
  

For the Coconut Chicken
  • 2 lbs boneless, skinless chicken tenders
  • 1 cup shredded coconut (sweetened or unsweetened) Your choice!
  • 1 cup all-purpose flour
  • 2 large eggs Beaten
  • Salt and pepper To taste
  • A splash of cooking oil For frying
For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha More if you want extra spice!
  • 1 teaspoon lime juice

Method
 

Preparation
  1. Season the chicken tenders with salt and pepper.
  2. Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for shredded coconut.
  3. Dredge each chicken tender in flour, dip in the egg, and coat with coconut.
Cooking
  1. In a large skillet, heat a splash of cooking oil over medium heat.
  2. Place the chicken tenders in the pan and cook each side for about 3-4 minutes or until golden brown.
Bang Bang Sauce
  1. In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice.
Serving
  1. Plate the chicken and drizzle the Bang Bang sauce on top or serve on the side.
  2. Garnish with chopped green onions if desired.

Notes

You can prep the chicken ahead of time and store it in the fridge until ready to cook. The Bang Bang sauce can also be used for shrimp or vegetables.
