Ingredients
  

Main Ingredients
  • 2 cups grated potatoes (about 2 medium potatoes) Peel and squeeze out excess moisture.
  • 1 cup shredded cheese (Cheddar or mozzarella) Choose your favorite kind.
  • 1/4 cup chopped fresh herbs (parsley, chives, or dill) Mix different herbs for variety.
  • 1/2 cup all-purpose flour Adjust the amount as needed.
  • 1 large egg Acts as a binder.
  • to taste salt and pepper Season generously.
  • as needed oil for frying Can use canola or vegetable oil.

Method
 

Preparation
  1. Peel and grate the potatoes, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. In a mixing bowl, combine the grated potatoes, shredded cheese, chopped herbs, flour, and egg. Season with salt and pepper.
Frying
  1. Heat about 1/4 inch of oil in a large frying pan over medium heat.
  2. Scoop about a tablespoon of the mixture, flatten it into a patty, and place it in the hot oil. Repeat with the remaining batter.
  3. Fry for about 3-4 minutes on each side until golden brown.
  4. Transfer fritters to a paper towel-lined plate to drain excess oil and let cool for a minute.

Notes

These fritters freeze well! After cooking, let them cool completely, then store in an airtight container in the freezer and reheat in an oven when ready to enjoy.
