Preparation
- Peel and grate the potatoes, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- In a mixing bowl, combine the grated potatoes, shredded cheese, chopped herbs, flour, and egg. Season with salt and pepper.
Frying
- Heat about 1/4 inch of oil in a large frying pan over medium heat.
- Scoop about a tablespoon of the mixture, flatten it into a patty, and place it in the hot oil. Repeat with the remaining batter.
- Fry for about 3-4 minutes on each side until golden brown.
- Transfer fritters to a paper towel-lined plate to drain excess oil and let cool for a minute.

These fritters freeze well! After cooking, let them cool completely, then store in an airtight container in the freezer and reheat in an oven when ready to enjoy.
