  • 4 large large onions (yellow or sweet)
  • 1 cup asiago cheese, grated High-quality asiago for best flavor.
  • ½ cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme Or 1 teaspoon dried.
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional) Recommended for added flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Peel and slice the onions into thick rounds about 1-inch apart.
Sautéing
  1. In a skillet over medium heat, add 2 tablespoons of olive oil. Add the onion rounds one by one, sprinkling with salt and pepper. Sauté for about 5-7 minutes until tender and slightly golden.
Layering
  1. Transfer the sautéed onion rounds to a greased baking dish. Pour the heavy cream over the onions and sprinkle with grated asiago cheese. If desired, add garlic powder and fresh thyme.
Baking
  1. Cover the dish with aluminum foil and bake for 25-30 minutes. Remove the foil and switch to broil for the last 5 minutes, watching closely for a golden color.
Serving
  1. Once golden and bubbly, let it cool for a couple of minutes and serve as a side dish.

Notes

Don’t worry about some lumps; they add character. Experiment with different cheese options for variety. Leftover onions can be used in other recipes like frittatas or pizzas.
