Preparation
- Preheat your oven to 375°F (190°C). Peel and slice the onions into thick rounds about 1-inch apart.
Sautéing
- In a skillet over medium heat, add 2 tablespoons of olive oil. Add the onion rounds one by one, sprinkling with salt and pepper. Sauté for about 5-7 minutes until tender and slightly golden.
Layering
- Transfer the sautéed onion rounds to a greased baking dish. Pour the heavy cream over the onions and sprinkle with grated asiago cheese. If desired, add garlic powder and fresh thyme.
Baking
- Cover the dish with aluminum foil and bake for 25-30 minutes. Remove the foil and switch to broil for the last 5 minutes, watching closely for a golden color.
Serving
- Once golden and bubbly, let it cool for a couple of minutes and serve as a side dish.
Notes
Don’t worry about some lumps; they add character. Experiment with different cheese options for variety. Leftover onions can be used in other recipes like frittatas or pizzas.
