Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the goat cheese, honey, chopped pistachios, fresh thyme, and a pinch of salt and pepper.
- On a floured surface, roll out each pastry sheet slightly thinner.
- Cut the rolled pastry into squares, about 3x3 inches.
- Place a spoonful of the goat cheese mixture in the center of each square.
- Fold the squares over to form triangles and pinch the edges to seal.
Baking
- Arrange the bites on a parchment-lined baking sheet.
- Brush the tops with the remaining beaten egg and bake for about 20 minutes, or until golden brown.
Serving
- Let them cool for a few minutes before serving.
- Serve warm drizzled with extra honey and sprinkled with more chopped pistachios.
Notes
These are best enjoyed fresh but can hold up nicely in the fridge for a couple of days. Just reheat in the oven for a few minutes before serving.
