Ingredients
  

Main Ingredients
  • 8 ounces Fresh goat cheese
  • 1/4 cup Honey
  • 1/2 cup Pistachios, finely chopped
  • 1 tablespoon Fresh thyme Or dried, but fresh is best!
  • 2 sheets Puff pastry sheets, thawed
  • 1 large Egg, beaten for egg wash
  • Salt and pepper To taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the goat cheese, honey, chopped pistachios, fresh thyme, and a pinch of salt and pepper.
  3. On a floured surface, roll out each pastry sheet slightly thinner.
  4. Cut the rolled pastry into squares, about 3x3 inches.
  5. Place a spoonful of the goat cheese mixture in the center of each square.
  6. Fold the squares over to form triangles and pinch the edges to seal.
Baking
  1. Arrange the bites on a parchment-lined baking sheet.
  2. Brush the tops with the remaining beaten egg and bake for about 20 minutes, or until golden brown.
Serving
  1. Let them cool for a few minutes before serving.
  2. Serve warm drizzled with extra honey and sprinkled with more chopped pistachios.

Notes

These are best enjoyed fresh but can hold up nicely in the fridge for a couple of days. Just reheat in the oven for a few minutes before serving.
