  • 4 oz goat cheese, softened This will be mixed for the filling.
  • 1 cup cherry tomatoes, halved To be distributed on top.
  • 2 tablespoons fresh basil, chopped For garnish.
  • 1 tablespoon olive oil To drizzle over the tomatoes.
  • to taste Salt and pepper For seasoning.
  • optional Balsamic glaze For drizzling at the end.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Unroll the puff pastry on a floured surface and transfer it to a parchment-lined baking sheet, pressing it down gently.
  3. In a small bowl, mix the softened goat cheese with salt and pepper.
  4. Spread the goat cheese mixture evenly over the dough, leaving a 1-inch border.
  5. Distribute the halved cherry tomatoes over the goat cheese mixture.
  6. Drizzle with olive oil.
Baking
  1. Bake for 20-25 minutes or until the pastry is puffy and golden.
  2. Sprinkle fresh basil on top and drizzle with balsamic glaze, if using.
