Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups chocolate cookie crumbs Use crushed Oreos or similar chocolate cookies.
  • 0.5 cups ½ cup unsalted butter, melted
For the filling
  • 1 cup 1 cup creamy peanut butter
  • 1 cup 1 cup powdered sugar
  • 8 oz 8 oz cream cheese, softened
  • 1 cup 1 cup whipped topping (like Cool Whip)
For the ganache
  • 1 cup 1 cup semi-sweet chocolate chips
  • 0.5 cups ½ cup heavy cream
  • 0.5 cups ½ cup miniature peanut butter cups, chopped (for topping!)

Method
 

Make the Crust
  1. In a medium bowl, mix together chocolate cookie crumbs with the melted butter until well combined. Press this mixture firmly into the bottom and sides of a 9-inch pie pan. Chill in the fridge for about 20 minutes.
Prepare the Filling
  1. In another bowl, beat together the creamy peanut butter, softened cream cheese, and powdered sugar until smooth. Fold in whipped topping until just blended.
Assemble the Pie
  1. Spoon the peanut butter filling into the chilled crust, spreading evenly. Chill for about an hour.
Prepare the Ganache
  1. In a small saucepan over low heat, bring heavy cream to a gentle simmer. Remove from heat and stir in chocolate chips until melted. Let it cool slightly before pouring over the peanut butter filling.
Top It Off
  1. Sprinkle chopped miniature peanut butter cups over the ganache. Chill the pie for an additional 30 minutes before serving.

Notes

Make this pie a day ahead for the best results. You can customize the toppings by adding drizzled chocolate or a sprinkle of sea salt.
