Ingredients
  

For the Taco Filling
  • 1 lb ground beef (or turkey) For a healthier option, you can use ground turkey.
  • 1 packet taco seasoning
  • 1 cup shredded cheese Sharp cheddar works best.
  • 1 small onion, diced
  • 1/2 cup black beans Drained and rinsed.
  • 1 cup diced tomatoes Fresh or canned.
  • to taste salt and pepper
For the Pie
  • 2 sheets refrigerated pie crust Homemade is great, but store-bought saves time.
  • 1 each egg For egg wash.
  • as needed cooking spray or flour For dusting.
  • to taste hot sauce Optional for extra kick.
Garnish
  • to taste sour cream For dipping.
  • to taste guacamole For dipping.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat. Add diced onion and sauté until softened.
  3. Stir in taco seasoning, black beans, and diced tomatoes. Let simmer for about 5-7 minutes.
  4. Sprinkle flour on your countertop and roll out the pie crusts. Cut into 6-inch circles.
  5. Spoon taco filling onto one half of each circle, add cheese, and fold to create a half-moon shape. Seal the edges with a fork.
  6. Use a small knife to cut ghostly eye shapes into the tops of the hand pies if desired.
  7. Place hand pies on a baking tray lined with parchment paper and brush with egg wash.
  8. Bake for 15-20 minutes until puffed and golden brown.
  9. Let cool for a few minutes and serve with sour cream or guacamole.

Notes

These hand pies freeze well. Make a double batch for quick meals. Get creative with fillings by trying shredded chicken, refried beans, or adding bell peppers or corn.
