- Preheat your oven to 400°F (200°C).
- In a large skillet, brown the ground beef over medium heat. Add diced onion and sauté until softened.
- Stir in taco seasoning, black beans, and diced tomatoes. Let simmer for about 5-7 minutes.
- Sprinkle flour on your countertop and roll out the pie crusts. Cut into 6-inch circles.
- Spoon taco filling onto one half of each circle, add cheese, and fold to create a half-moon shape. Seal the edges with a fork.
- Use a small knife to cut ghostly eye shapes into the tops of the hand pies if desired.
- Place hand pies on a baking tray lined with parchment paper and brush with egg wash.
- Bake for 15-20 minutes until puffed and golden brown.
- Let cool for a few minutes and serve with sour cream or guacamole.
Notes
These hand pies freeze well. Make a double batch for quick meals. Get creative with fillings by trying shredded chicken, refried beans, or adding bell peppers or corn.
