  • 4 medium medium cucumbers, thinly sliced Preferably English cucumbers for their mild flavor.
  • 1 small small red onion, finely chopped The kind that brings some sweetness when mixed in.
  • 1 cup sour cream or Greek yogurt For that creamy goodness.
  • 2 tablespoons white vinegar Adds some zing!
  • 1 tablespoon sugar A little sweetness never hurt.
  • Salt and pepper to taste
  • Fresh dill or parsley, chopped Optional, but enhances flavor.

Method
 

Preparation
  1. Start by washing the cucumbers. Slice them thinly using a mandolin or a sharp knife.
  2. In your bowl, toss in the finely chopped red onion with the cucumbers.
  3. In a separate bowl, mix together the sour cream (or Greek yogurt), white vinegar, and sugar. Season with salt and pepper to taste.
  4. Once your dressing is ready, pour it over the cucumber and onion mixture. Gently toss until well combined.
  5. Let the salad chill in the refrigerator for about 30 minutes.
  6. Before serving, sprinkle with fresh dill or parsley.

Notes

For picky eaters, soak chopped onions in cold water to reduce pungency. Add cherry tomatoes or bell peppers for extra color. This salad can be made ahead for potlucks.
