  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs (use panko for extra crunch)
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning or your favorite herb mix

  • to taste Pepper
  • 1/2 cup melted butter for crispy coating
  • to garnish Fresh parsley, chopped for garnish and color

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel, and season both sides with salt and pepper. Place them on a baking sheet lined with foil.
  3. In a large bowl, mix together the parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, salt, and pepper.
  4. Brush the melted butter over each chicken breast, then generously sprinkle the breadcrumb mixture on top, pressing down lightly.
Cooking
  1. Bake for about 25-30 minutes, or until the chicken is golden and cooked through (internal temperature of 165°F).
Serving
  1. Once out of the oven, sprinkle with fresh parsley before serving.

Notes

Add red pepper flakes for spice or swap parmesan for another cheese like cheddar. Crust may fall apart slightly, but it adds to the fun of the meal.
