Method
 

Preparation
  1. In a large skillet or wok, heat the olive oil over medium heat until it shimmers.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the sliced mushrooms and cook for 4-5 minutes until tender and browned.
  4. Add the chopped bok choy and stir, allowing it to wilt for about 3-4 minutes.
  5. Pour in the soy sauce, then season with salt, pepper, and red pepper flakes.
  6. Give everything a final stir and serve hot, either over rice or noodles, or enjoy it straight from the pan.

Notes

Substitute bok choy with spinach or kale if preferred. For added protein, include tofu, chicken, or shrimp. Leftovers can be stored in an airtight container for up to 3 days.
