  • 2-4 fillets Salmon fillets Depending on your family size
  • 1 bunch Fresh asparagus
  • 1 pound Baby potatoes, halved About 1 pound
  • 4 cloves Garlic, minced
  • 2 tablespoons Fresh herbs (dill, parsley, or thyme), chopped About 2 tablespoons
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 Lemon, juiced
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, toss the halved baby potatoes in olive oil, salt, and pepper. Spread them out evenly.
  3. Add the fresh asparagus to the same dish, mixing it with the potatoes. Drizzle with more olive oil and season with salt and pepper.
Baking
  1. Bake the veggies for about 15 minutes.
  2. In a small bowl, melt the butter and whisk it together with the minced garlic, fresh herbs, and lemon juice.
  3. After the veggies have baked for 15 minutes, push them to the sides of the dish and place the salmon fillets in the center, skin side down. Brush the garlic herb butter over the top.
  4. Return the dish to the oven and bake everything for another 12-15 minutes or until the salmon flakes easily.
Serving
  1. Plate the dish and sprinkle with fresh herbs before serving.

Notes

If you don't have fresh herbs, use dried ones but halve the amount. Watch the time to avoid overcooking the salmon. This dish is great for meal prep!
