  • Olive oil Olive oil For cooking the potatoes.

Method

Preparation
  1. Season the steak liberally with salt, pepper, and rosemary. Let it sit while preparing the potatoes.
Cooking the Potatoes
  1. In a skillet over medium heat, add about a tablespoon of olive oil. Add halved baby potatoes and sprinkle with a pinch of salt. Cook until golden brown and tender, about 10-12 minutes.
Searing the Steak
  1. Push the potatoes to one side and add the steak to the skillet. Cook for 4-6 minutes on each side for medium rare to medium.
Adding Garlic Butter
  1. When the steak is nearly done, add minced garlic and butter to the skillet. Spoon the melted garlic butter over the steak.
Serving
  1. Let the steak rest for about 5 minutes, then slice against the grain. Combine with potatoes and garnish with fresh parsley.

Notes

Letting the steak rest locks in juices for better flavor. Adjust vegetable choices for picky eaters.
