Preparation
- Season the steak liberally with salt, pepper, and rosemary. Let it sit while preparing the potatoes.
Cooking the Potatoes
- In a skillet over medium heat, add about a tablespoon of olive oil. Add halved baby potatoes and sprinkle with a pinch of salt. Cook until golden brown and tender, about 10-12 minutes.
Searing the Steak
- Push the potatoes to one side and add the steak to the skillet. Cook for 4-6 minutes on each side for medium rare to medium.
Adding Garlic Butter
- When the steak is nearly done, add minced garlic and butter to the skillet. Spoon the melted garlic butter over the steak.
Serving
- Let the steak rest for about 5 minutes, then slice against the grain. Combine with potatoes and garnish with fresh parsley.
Notes
