Preparation
- Wash the potatoes and cut them in half or quarter them for even cooking.
- Place the halved potatoes in a pot, cover with water, and add a generous pinch of salt.
Cooking
- Bring the water to a boil, then simmer the potatoes for about 15 minutes or until fork-tender.
- While the potatoes are boiling, season the steaks with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat and sear the steaks for about 4-5 minutes on each side for medium-rare.
- After searing, add the butter and minced garlic to the skillet, spoon the garlic butter over the steaks.
- Drain the potatoes and add them to the skillet with the garlic butter, and gently toss until coated.
- Plate the steaks and potatoes, drizzle any remaining garlic butter on top, and serve.
Notes
Do not overcook the garlic as it may turn bitter. Substitutes for ribeye include filet mignon or sirloin. You can also add veggies like asparagus or bell peppers for added flavor.
