Ingredients
  

For the Lobster Bites
  • 1 pound lobster meat, cooked and chopped Feel free to use frozen if fresh isn’t handy.
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped To add a bit of green.
  • Salt and pepper to taste
  • Lemon wedges for garnish For a zesty twist.
For the Saffron Mash
  • 2 large potatoes, peeled and cubed
  • 1 cup heavy cream
  • A pinch of saffron threads This golden treasure is worth every penny.
  • Salt and pepper, to taste
  • 1 tablespoon olive oil For a silky finish.

Method
 

Prepare the Lobster Bites
  1. In a skillet, melt the butter over medium heat.
  2. Add the minced garlic and cook until fragrant (about 1 minute), being careful not to let it turn brown.
  3. Toss in the chopped lobster meat, salt, and pepper. Stir until everything is heated through and coated in the garlic butter sauce.
  4. Stir in the fresh parsley.
Create the Saffron Mash
  1. Boil the potatoes in salted water until fork-tender.
  2. Drain and return the potatoes to the pot.
  3. In a small saucepan, heat the heavy cream and add the saffron threads to infuse flavor.
  4. Pour the saffron-infused cream over the potatoes and mash until creamy. Adjust with salt and pepper.
  5. Drizzle in the olive oil, stirring until smooth.
Plate It Up
  1. On a platter, spread a layer of saffron mash.
  2. Top with the lobster bites and garnish with lemon wedges.
  3. Prepare to take a photo!

Notes

If using frozen lobster, thaw it overnight in the fridge. A pinch of turmeric can be used instead of saffron in a pinch, but saffron is the best choice. Add red pepper flakes for a hint of spice if desired.
