Prepare the Lobster Bites
- In a skillet, melt the butter over medium heat.
- Add the minced garlic and cook until fragrant (about 1 minute), being careful not to let it turn brown.
- Toss in the chopped lobster meat, salt, and pepper. Stir until everything is heated through and coated in the garlic butter sauce.
- Stir in the fresh parsley.
Create the Saffron Mash
- Boil the potatoes in salted water until fork-tender.
- Drain and return the potatoes to the pot.
- In a small saucepan, heat the heavy cream and add the saffron threads to infuse flavor.
- Pour the saffron-infused cream over the potatoes and mash until creamy. Adjust with salt and pepper.
- Drizzle in the olive oil, stirring until smooth.
Plate It Up
- On a platter, spread a layer of saffron mash.
- Top with the lobster bites and garnish with lemon wedges.
- Prepare to take a photo!
Notes
If using frozen lobster, thaw it overnight in the fridge. A pinch of turmeric can be used instead of saffron in a pinch, but saffron is the best choice. Add red pepper flakes for a hint of spice if desired.
