Preparation
- Rinse the lobster tails under cold water.
- Using kitchen scissors, cut the shells down the center, stopping just before the tail fin.
Grilling
- Preheat the grill to medium-high heat.
- In a small saucepan, melt the butter over medium heat.
- Add the minced garlic and sauté for about a minute until fragrant but not browned.
- Stir in lemon juice, parsley, and season with salt and pepper.
- Brush the lobster meat generously with the garlic butter mixture.
- Place the lobster tails shell-side down on the grill and grill for about 6-8 minutes or until the meat turns opaque.
Serving
- Remove the tails from the grill and drizzle with remaining garlic butter.
- Garnish with extra parsley and lemon wedges.
Notes
Don't overcook the lobster to keep it tender. Pair with grilled asparagus or a fresh garden salad for a well-rounded meal.
