  • 1.5 to 2 pounds flank steak or sirloin (about ¾–1 inch thick) Ribeye can be used for a fattier cut. For budget-friendly option, use skirt steak.
  • 1 teaspoon kosher salt More to taste.
  • 0.5 teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter Allows better control of seasoning.
  • 4 large cloves garlic, finely minced Fresh garlic recommended.
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 unit lime, cut into wedges
  • 0.5 teaspoon smoked paprika (optional) For a touch of warmth.
  • pinch red pepper flakes (optional) Use if you like a little kick.

Method
 

Preparation
  1. Bring the steak to room temperature for about 20 minutes to ensure even cooking.
  2. Pat the steak dry with paper towels. Sprinkle both sides with kosher salt and black pepper. Add smoked paprika if using.
Cooking
  1. Heat a heavy skillet over medium-high heat. Add olive oil and let it shimmer.
  2. Sear the steak for 3–4 minutes per side for medium-rare.
  3. In the last 1–2 minutes, reduce heat to medium-low, add butter, minced garlic, and red pepper flakes, and baste the steak with the garlic butter.
  4. Remove the steak and sauce to a cutting board and let it rest for 5–7 minutes.
  5. Slice the steak thinly across the grain and spoon garlic butter over the slices.
  6. Finish with chopped parsley and a squeeze of lime.

Notes

Serve with rice, mashed potatoes, or a salad. Leftovers can be used in sandwiches or grain bowls. Resting the steak is crucial for juiciness.
