Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan (or line it with parchment paper).
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Mixing
- In a large mixing bowl, cream together the softened butter and granulated sugar until fluffy and pale.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Mix in the sour cream until fully incorporated.
- Gradually add the dry mixture to the wet ingredients until just combined. Add a splash of milk if the batter is too thick.
Baking
- Gently fold in the rainbow sprinkles.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Don't be stingy with sprinkles; feel free to adjust the amount. Greek yogurt can substitute for sour cream. Store leftovers in an airtight container for up to 3 days.
