  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/4 cup milk if needed
Mix-ins
  • 1/2 cup rainbow sprinkles

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan (or line it with parchment paper).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Mixing
  1. In a large mixing bowl, cream together the softened butter and granulated sugar until fluffy and pale.
  2. Beat in the eggs one at a time, followed by the vanilla extract.
  3. Mix in the sour cream until fully incorporated.
  4. Gradually add the dry mixture to the wet ingredients until just combined. Add a splash of milk if the batter is too thick.
Baking
  1. Gently fold in the rainbow sprinkles.
  2. Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick comes out clean.
  3. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Don't be stingy with sprinkles; feel free to adjust the amount. Greek yogurt can substitute for sour cream. Store leftovers in an airtight container for up to 3 days.
