Ingredients
  

For the Pie Filling
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour Can be substituted with gluten-free flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 cup melted butter Butter makes everything better!
  • 1 teaspoon vanilla extract
  • 1 pinch salt Just enough to keep it interesting
For the Crust
  • 1.5 cups graham cracker crumbs Can use crushed cookies or Oreo crumbs for a different flavor
  • 0.5 cup melted butter
  • 0.25 cup granulated sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (about 175°C).
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until combined. Press mixture into the bottom and up the sides of a pie dish.
Filling
  1. In a large bowl, whisk together melted butter, cocoa powder, granulated sugar, brown sugar, and salt until smooth.
  2. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract and then fold in flour gently.
Baking
  1. Pour the filling into the prepared crust and smooth the top.
  2. Bake for about 25-30 minutes or until the top looks slightly cracked. It’s fine if it wiggles a bit in the center.
Cooling and Serving
  1. Let it cool at room temperature before slicing.
  2. Serve warm, preferably with a scoop of ice cream.

Notes

If the pie is still jiggling slightly in the center after baking, it will continue to set as it cools. For upgraded toppings, consider a dollop of whipped cream or a scoop of vanilla ice cream.
