Main Ingredients
  • 4 medium potatoes, diced
  • 1 large onion, thinly sliced
  • 1 pound sausage (any kind) turkey, pork, or spicy Italian works well
  • 3 tablespoons olive oil
  • to taste salt and pepper
  • to taste fresh parsley, chopped for garnish

Method
 

Cooking the Sausage
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add your sausage and cook until browned, breaking it into bite-sized pieces.
Sauté the Onions
  1. Remove the sausage from the skillet and set aside. In the same skillet, add the remaining olive oil and sliced onions. Sauté until golden brown, about 5 minutes.
Add Potatoes
  1. Add diced potatoes to the skillet with the onions. Season with salt and pepper. Cover and cook for about 15-20 minutes, stirring occasionally, until crispy on the outside and soft on the inside.
Combine and Serve
  1. Add the cooked sausage back into the skillet. Stir to combine and cook together for another minute or two.
Garnish and Enjoy
  1. Sprinkle with fresh parsley before serving.

Notes

For perfect crispy potatoes, do not overcrowd the pan. Feel free to add other vegetables or cheese. Leftovers can be stored in an airtight container in the fridge for up to three days.
