Ingredients
  

For the Pie Dough
  • 2 cups all-purpose flour For the pie dough
  • 1 teaspoon salt For flavor
  • 2 tablespoons sugar To sweeten the dough
  • 1/2 cup unsalted butter, chilled and cubed Make sure it's chilled for flakiness
  • 1/4 cup ice water To bring the dough together
For the Filling
  • 2-3 cups peeled and diced apples or peaches (fresh or canned) Use fresh or good quality canned fruit
  • 1 cup sugar Adjust based on the sweetness of the fruit
  • 1 teaspoon cinnamon For spicing up the filling
  • 1 tablespoon lemon juice To enhance flavor and prevent browning
  • 2 tablespoons cornstarch For thickening the filling
For Frying
  • Vegetable oil For frying the pies

Method
 

Make the Pie Dough
  1. In a mixing bowl, combine flour, salt, and sugar.
  2. Add the chilled butter and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
  3. Gradually add ice water until the dough just comes together.
  4. Wrap in plastic and let it chill in the fridge for about 30 minutes.
Prepare the Filling
  1. In a large bowl, toss together the diced apples or peaches, sugar, cinnamon, lemon juice, and cornstarch.
Roll Out the Dough
  1. After chilling, roll out the dough on a floured surface until it’s about 1/8 inch thick.
  2. Cut into circles—about 5-6 inches in diameter.
Fill and Seal
  1. Place a generous tablespoon of filling in the center of each dough circle.
  2. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
  3. Make a couple of small cuts on top to let steam escape.
Fry the Pies
  1. In a large skillet, heat about an inch of vegetable oil over medium heat.
  2. Carefully add the pies, a few at a time. Fry until golden brown on both sides, about 3-4 minutes.
  3. Drain on paper towels.
Serve with Flair
  1. Dust with powdered sugar or serve with a scoop of vanilla ice cream.
