Method
Make the Pie Dough
- In a mixing bowl, combine flour, salt, and sugar.
- Add the chilled butter and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
- Gradually add ice water until the dough just comes together.
- Wrap in plastic and let it chill in the fridge for about 30 minutes.
Prepare the Filling
- In a large bowl, toss together the diced apples or peaches, sugar, cinnamon, lemon juice, and cornstarch.
Roll Out the Dough
- After chilling, roll out the dough on a floured surface until it’s about 1/8 inch thick.
- Cut into circles—about 5-6 inches in diameter.
Fill and Seal
- Place a generous tablespoon of filling in the center of each dough circle.
- Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
- Make a couple of small cuts on top to let steam escape.
Fry the Pies
- In a large skillet, heat about an inch of vegetable oil over medium heat.
- Carefully add the pies, a few at a time. Fry until golden brown on both sides, about 3-4 minutes.
- Drain on paper towels.
Serve with Flair
- Dust with powdered sugar or serve with a scoop of vanilla ice cream.
