Preparation
  1. Start by dicing your peaches and chopping up the vibrant tomatoes.
  2. In a large bowl, combine your chopped peaches, tomatoes, and red onion.
  3. Gently toss in the fresh basil, olive oil, balsamic vinegar, and a pinch of salt and pepper.
  4. Let the mixture sit for five minutes for the flavors to meld.

Notes

For enhanced flavor, chill the dish in the fridge for about 30 minutes before serving. Optional: Add crumbled feta or goat cheese for a creamy contrast.
