- In a large skillet, heat the olive oil over medium heat. Once it’s shimmering, toss in the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the diced tomatoes along with their juice. Sprinkle in the oregano and season with salt and pepper. Let it simmer for about 5 minutes.
- Nestle the cod fillets into the pan and spoon some tomato sauce over each piece. Cook for about 4-5 minutes on one side, then gently flip and cook for another 4-5 minutes until the fish flakes easily with a fork.
- Just before serving, sprinkle fresh basil over the top and serve.
Notes
Fish can be finicky! Keep an eye on the cooking time to avoid overcooking. Pair with a simple side salad or quinoa for a complete meal.
