  • 4 pieces fresh cod fillets (about 6 ounces each) You can substitute with other flaky fish like halibut or tilapia.
  • 1 can diced tomatoes (14.5 ounces) Preferably organic.
  • 1 clove garlic, minced Use 2 cloves if you want a stronger garlic flavor.
  • 1 tablespoon olive oil For sautéing.
  • 1 teaspoon dried oregano
  • 1/4 cup fresh basil, chopped Add more if you love basil.
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Once it’s shimmering, toss in the minced garlic and sauté for about 30 seconds until fragrant.
  2. Pour in the diced tomatoes along with their juice. Sprinkle in the oregano and season with salt and pepper. Let it simmer for about 5 minutes.
  3. Nestle the cod fillets into the pan and spoon some tomato sauce over each piece. Cook for about 4-5 minutes on one side, then gently flip and cook for another 4-5 minutes until the fish flakes easily with a fork.
  4. Just before serving, sprinkle fresh basil over the top and serve.

Notes

Fish can be finicky! Keep an eye on the cooking time to avoid overcooking. Pair with a simple side salad or quinoa for a complete meal.
