  • 1 large onion, finely sliced the star of the dish
  • 4 cloves garlic, minced
  • 1 cup breadcrumbs (or oats for a healthier twist)
  • 1/2 cup milk
  • 2 large eggs
  • 1 cup grated Swiss cheese adds flair
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

Preparation
  1. Start by caramelizing the onions. In a skillet, melt a tablespoon of butter (or oil) over medium heat. Toss in the sliced onions, a sprinkle of salt, and let them cook for about 15-20 minutes until golden and soft.
  2. In a large bowl, combine the ground beef, sautéed onions, minced garlic, breadcrumbs, milk, eggs, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix until well combined.
  3. Form the mixture into a loaf shape and gently place it into your slow cooker.
Cooking
  1. Cover the meatloaf and cook on low for 6-8 hours, or on high for about 3-4 hours.
  2. About 30 minutes before it’s done, sprinkle the grated Swiss cheese on top.
Serving
  1. When the meatloaf is cooked through, slice it up and serve with your favorite sides.

Notes

Feel free to add herbs like thyme or rosemary for extra flavor. Store leftovers in an airtight container in the fridge for up to three days. Reheat gently for a delicious meatloaf sandwich.
