Ingredients
  

Root Vegetables
  • 2 medium potatoes, peeled and sliced thinly Use any type of potato you prefer.
  • 2 carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
Cheeses
  • 1 cup shredded Gruyère cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup crumbled feta cheese
  • 1 cup grated Parmesan cheese
Creaminess
  • 2 cups heavy cream
Seasoning
  • Salt and pepper to taste
  • pinch nutmeg
  • Optional fresh herbs Use for added flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish and start layering the root vegetables: begin with potatoes, followed by carrots, and finish with parsnips. Sprinkle each layer with a little salt, pepper, and nutmeg.
Assembly
  1. Pour the heavy cream over the vegetables until just covered.
  2. Sprinkle the four cheeses generously over the top layers.
Baking
  1. Cover the baking dish with aluminum foil and bake for about 45 minutes.
  2. Uncover and bake for an additional 15 minutes or until the top is golden brown and bubbly.
Serving
  1. Let the gratin cool for a few moments before serving.

Notes

Feel free to mix different cheeses and root vegetables. This dish can be assembled in advance and stored in the fridge; just adjust baking time if refrigerated.
