- Grease a baking dish and start layering the root vegetables: begin with potatoes, followed by carrots, and finish with parsnips. Sprinkle each layer with a little salt, pepper, and nutmeg.
Assembly
- Pour the heavy cream over the vegetables until just covered.
- Sprinkle the four cheeses generously over the top layers.
Baking
- Cover the baking dish with aluminum foil and bake for about 45 minutes.
- Uncover and bake for an additional 15 minutes or until the top is golden brown and bubbly.

- Let the gratin cool for a few moments before serving.
