Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy (about 3-5 minutes).
- Stir in the vanilla extract.
- Gradually add the flour and salt, mixing until just combined.
- Fold in the finely chopped nuts.
- Roll the dough into 1-inch balls and place them on a cookie sheet lined with parchment paper.
- Bake for about 12-15 minutes or until the bottoms are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before rolling them in powdered sugar, then roll them again once completely cool.
Notes
For a nut-free option, simply omit the nuts. Store in an airtight container; they'll last for up to a week. You can freeze the dough or baked cookies with parchment paper in between layers.
