  • 1 cup finely chopped nuts (walnuts or pecans) Feel free to experiment!

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy (about 3-5 minutes).
  3. Stir in the vanilla extract.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Fold in the finely chopped nuts.
  6. Roll the dough into 1-inch balls and place them on a cookie sheet lined with parchment paper.
  7. Bake for about 12-15 minutes or until the bottoms are lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before rolling them in powdered sugar, then roll them again once completely cool.

Notes

For a nut-free option, simply omit the nuts. Store in an airtight container; they'll last for up to a week. You can freeze the dough or baked cookies with parchment paper in between layers.
