  • 1 cup cottage cheese
  • 2 pieces ripe bananas the riper, the better!
  • 3 large eggs
  • 1 cup rolled oats or oat flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • a pinch salt
  • Cooking spray or butter for frying

Method
 

Preparation
  1. In a blender or food processor, combine the cottage cheese, bananas, eggs, oats, baking powder, vanilla, and salt. Blend until you have a smooth batter.
  2. Warm up a non-stick skillet over medium heat. Once hot, lightly spray or coat it with butter.
Cooking
  1. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until you see bubbles forming on the surface and the edges look set — about 2-3 minutes. Then, flip and cook for another 2-3 minutes until golden brown.
  2. Serve these fluffy wonders with your favorite toppings.

Notes

Make it Ahead: These pancakes freeze beautifully! Just stack them between layers of parchment paper and store them in an airtight container. On busy mornings, pop a couple in the toaster for a quick breakfast. If bananas are your thing, try adding chocolate chips or walnuts for a delightful twist.
