- In a small bowl, combine the soy sauce, honey, sesame oil, garlic, and ginger. Whisk until all ingredients are blended.
- In a large skillet over medium heat, add the ground chicken. Break it up with your spatula and cook until fully browned, about 5 to 7 minutes.
- Stir in the broccoli slaw and bell pepper, cooking until slightly tender, around 3 to 4 minutes.
- Pour the teriyaki sauce over the chicken and veggies, cooking for an additional 2-3 minutes.
- While the filling is cooking, separate the lettuce leaves, using the larger leaves as wrap bases.
- Scoop the teriyaki chicken mixture into each lettuce leaf and top with sesame seeds and green onions, if desired.
Notes
Feel free to add chopped water chestnuts for crunch or substitute ground chicken with turkey or tofu. This dish is great for meal prep; make a double batch and store for quick lunches.
