  • 1 cup cherry tomatoes, halved

  • 1 cup black olives, halved

  • 1 cup mozzarella balls (bocconcini)
  • Olive oil (for dressing)
  • Salt and pepper to taste
  • Green onions (for garnish)

Method
 

Cook the Pasta
  1. Bring a pot of salted water to a boil and add your rotini pasta. Cook according to the package instructions until al dente (usually around 8-10 minutes).
  2. Drain and rinse with cold water to stop the cooking process. Set aside to cool.
Prepare the Eyeballs
  1. While your pasta is cooling, take your mozzarella balls and place them in a bowl.
  2. To create the 'eyeballs,' insert a sliver of olive (or black olive halves) into each mozzarella ball.
Mix the Salad
  1. In a large bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, diced bell pepper, and black olives.
  2. Drizzle olive oil over the entire mixture and mix gently.
  3. Season with salt and pepper to taste—don’t forget to adjust as needed!
Assemble and Serve
  1. Gently fold in your mozzarella eyeballs.
  2. For an extra touch, sprinkle some chopped green onions on top as garnish.
  3. You can also add a few drops of green or red food coloring for that additional spooky effect if you dare!
