Method
Preparation of Saffron
- Start by placing the saffron threads in a small bowl with the warm water. Let them steep for about 10 minutes.
Marinade Preparation
- In another bowl, whisk together olive oil, lemon zest, orange zest, orange juice, lemon juice, minced garlic, and a pinch of salt and pepper.
- Add in the saffron mixture.
Marinating the Chicken
- Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over.
- Let them marinate for at least 30 minutes, ideally up to an hour or overnight in the fridge.
Cooking the Chicken
- Preheat your grill, grill pan, or skillet over medium heat.
- Once hot, place the marinated chicken on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F.
- Brush with leftover marinade while cooking for extra flavor.
Serving
- Once done, let the chicken rest for a few minutes, slice, and add a sprinkle of fresh parsley on top before serving.
Notes
Feel free to toss some veggies on the grill alongside the chicken. Asparagus or bell peppers work well with this marinade. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
