Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
For the Chocolate Ganache
  • 1 cup heavy cream
  • 1 1/2 cups semisweet chocolate chips
For Decoration
  • Chocolate shavings optional
  • Whipped cream optional
  • Assorted chocolate candies to create that overload effect!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well incorporated.
  3. Add eggs, milk, vegetable oil, and vanilla to the dry mixture. Mix until just combined.
  4. Pour in boiling water and mix (the batter will be liquidy).
Baking
  1. Pour the batter evenly into two greased 9-inch round cake pans.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Ganache Preparation
  1. While the cakes cool, heat heavy cream in a small pot until it just begins to simmer.
  2. Remove from heat and add the chocolate chips. Stir until melted and smooth.
Assembly
  1. Place one cake layer on a serving platter. Spread ganache on top.
  2. Add the second layer and cover the entire cake with remaining ganache.
Decoration
  1. Decorate with chocolate shavings, whipped cream, and assorted candies.
Serving
  1. Slice and serve.

Notes

If your batter is slightly lumpy, it's okay! This cake can be made ahead and stored in the fridge, just bring to room temperature before serving.
