Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, powdered sugar, and salt.
- Cut in the butter using a fork or pastry cutter until the mixture looks like coarse crumbs.

Peach Filling
- While the crust is baking, in another bowl, toss the sliced peaches with granulated sugar, lemon juice, cornstarch, vanilla extract, and the optional cinnamon.
Combining and Baking
- Once your crust is ready, pour the peach filling evenly over the baked crust.
- Bake for another 30-35 minutes, or until the peaches are bubbly and slightly caramelized.
Cooling and Serving
- Allow the peach bars to cool completely on a wire rack before slicing into squares.
- For an extra treat, top with a scoop of vanilla ice cream.
