Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups all-purpose flour
  • 0.5 cups ½ cup powdered sugar
  • 0.5 teaspoon ½ teaspoon salt
  • 1 cup 1 cup unsalted butter, softened
For the peach filling
  • 4 cups 4 cups fresh peaches, sliced (about 5 medium peaches) Use the juiciest peaches
  • 0.75 cups ¾ cup granulated sugar
  • 1 tablespoon 1 tablespoon lemon juice
  • 2 tablespoons 2 tablespoons cornstarch
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 pinch Optional: pinch of cinnamon for extra warmth

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, powdered sugar, and salt.
  3. Cut in the butter using a fork or pastry cutter until the mixture looks like coarse crumbs.
  4. Press the mixture into an even layer in a greased 9x13 inch baking dish.
  5. Bake for about 15 minutes or until lightly golden.
Peach Filling
  1. While the crust is baking, in another bowl, toss the sliced peaches with granulated sugar, lemon juice, cornstarch, vanilla extract, and the optional cinnamon.
Combining and Baking
  1. Once your crust is ready, pour the peach filling evenly over the baked crust.
  2. Bake for another 30-35 minutes, or until the peaches are bubbly and slightly caramelized.
Cooling and Serving
  1. Allow the peach bars to cool completely on a wire rack before slicing into squares.
  2. For an extra treat, top with a scoop of vanilla ice cream.

Notes

Use the freshest peaches for best flavor. Allow cooling completely for clean slicing. Store leftovers in an airtight container in the fridge for up to four days.
