Ingredients
  

For the Base
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
For the Custard Filling
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 large egg yolks, beaten
For the Chocolate Topping
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
Make the Base
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Pour in the melted butter and egg, then mix until combined.
  2. Press this mixture evenly into the bottom of your prepared dish and bake for 15-20 minutes until lightly golden.
Prepare the Custard Filling
  1. In a saucepan, whisk together the milk, sugar, cornstarch, and salt over medium heat.
  2. Stir until it thickens and bubbles (around 5-7 minutes). Remove from heat and stir in vanilla extract and beaten egg yolks.
Fill 'Er Up!
  1. Pour the warm custard over the cooled base, spreading it evenly. Chill in the fridge for at least 2 hours.
Make the Chocolate Topping
  1. In a small saucepan, heat the heavy cream until it simmers.
  2. Remove from heat and stir in the chocolate chips until melted and smooth.
  3. Pour this mixture over the custard layer, then chill for at least 30 minutes until firm.
Slice and Serve
  1. Once chilled, use a sharp knife to cut into squares. Optionally dust with powdered sugar or add berries.

Notes

For cleaner cuts, run your knife under hot water, wipe it dry, and then cut. You can also try caramel sauce or toasted nuts as alternate toppings. Store in an airtight container in the fridge for up to 5 days.
