Easy Pizza-Stuffed Pumpkins

Ingredients
  

Pumpkin Preparation
  • 4-6 pieces mini pumpkins Choose pumpkins that are about the size of your hand.
Pizza Filling
  • 1 cup pizza sauce Store-bought or homemade.
  • 1-2 cups shredded mozzarella cheese Add more cheese if desired.
  • 1 cup sliced pepperoni Or substitute with your favorite toppings.
  • 1 teaspoon Italian seasoning Enhances the flavor.
  • to taste salt Season the inside of the pumpkins.
  • to taste pepper Season the inside of the pumpkins.
  • as needed garnish fresh basil Optional for garnishing.

Method
 

Preparation and Baking
  1. Preheat your oven to 375°F (190°C).
  2. Cut off the top of each mini pumpkin and scoop out the seeds.
  3. Lightly season the inside of the pumpkins with salt and pepper.
  4. In a mixing bowl, combine the pizza sauce, mozzarella, pepperoni, and Italian seasoning.
  5. Carefully stuff the pumpkins with the pizza filling, packing it in tightly.
  6. Top with additional cheese if desired.
  7. Place the stuffed pumpkins in a baking dish, pour 1 inch of water into the dish, cover with foil, and bake for 25–30 minutes.
  8. Remove the foil and bake for an additional 10–15 minutes, until cheese is golden and bubbly.
  9. Allow to cool slightly and garnish with fresh basil before serving.

Notes

Feel free to swap out toppings based on your preferences. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
