  • 1 pound your favorite sausages (Italian, pork, turkey)
  • 2 large potatoes, diced into bite-sized pieces
  • 2 bell peppers, sliced mix up the colors for a pretty presentation
  • 1 onion, sliced for flavor
Seasoning and oil
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional) for added flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes, sliced peppers, and onion together. Drizzle with olive oil, and sprinkle with salt, pepper, and garlic powder. Mix well.
  3. Spread the veggie mixture onto a baking sheet. Nestle the sausages among the veggies.
Cooking
  1. Slide your pan into the oven and let it bake for about 25-30 minutes. Toss everything halfway through for even cooking.
  2. Once everything is beautifully golden and fragrant, remove the pan from the oven. Serve it up or garnish with fresh herbs if desired.

Notes

Feel free to substitute veggies like zucchini or green beans. Leftovers are great reheated or added to a salad, and the dish can be made vegetarian with veggie sausages.
