  • 1 pound cheese (cheddar, mozzarella, or your personal favorite) Cut into bite-sized cubes.
  • 1 cup sliced salami
  • 1 cup pickles, sliced or speared
Marinade Ingredients
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Italian seasoning (oregano, basil, thyme) Choose your preferred herbs.
  • 1 teaspoon garlic powder

Optional Garnish

  1. Cut your cheese into bite-sized cubes.
Combining Ingredients
  1. In a large bowl, combine the cheese cubes, salami, and pickles.
Creating the Marinade
  1. In a separate bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, and a sprinkle of salt and pepper.

  1. Pour the marinade over the cheese mixture and gently toss everything until evenly coated.

  1. Cover the bowl and let the marinated cheese sit in the fridge for at least an hour, or a few hours for deeper flavor.

Notes

This recipe can be made ahead of time for convenience. You can also swap out salami for prosciutto or cooked bacon. Leftovers can last in the fridge for about a week.
