- In a large bowl, combine crushed graham crackers, cocoa powder, and melted coconut oil. Mix until it reaches a crumbly yet combined consistency.
- Add the powdered sugar and vanilla extract to the mixture. Stir until everything is evenly blended.
- Gently fold in the mini marshmallows and chocolate chips.
- Transfer the mixture into a greased 9x9-inch baking dish and press it down firmly.
- Cover with plastic wrap and refrigerate for at least an hour.
Serving
- Once chilled, cut them into squares and serve.
Notes
Feel free to add seasonal spices like cinnamon or nutmeg for extra flavor. If marshmallows float to the surface, gently push them back in with a spatula. This recipe is also great for gifting.
